I have an encrypted zipfile where I had hoped that the files contained within it would not be allowed to be deleted (unless the correct password was given) – this doesn’t appear to be the case.
Is it possible at all to prevent files contained within a zip archive to be “off-limits”? Or does password protection just prevent viewing but not adding/deleting/etc operations?

The password is required only to decrypt the data, and not to control the file. There is no mechanism in place in the Zip file format specification that would enable you to do what you want.
